We are a collective that develops from the Aglio Olio e Peperoncino association (known as Casa Consolat). Casa Consolat wants to be a place registered in an eco-responsible, supportive and social project, seeking to project itself into an economic model where the human relationship is essential and where openness to others, their history, their know-how, is valued to the maximum.
Our collective develops its various activities in the city of Marseille and its surroundings, but for several years we have increasingly shifted our interest, our collaborative links and our activities towards rural areas.
We are carrying out an experimental project of circular, social and solidarity economy, with a strong agroecological vocation, aiming at a sustainable and nature-friendly agricultural method. For this we use organic, permaculture, agroforestry and low environmental impact cultivation techniques.
For a year now we have recovered one hectare of vines in the Luberon and we aim to increase our production in the years to come. For the moment our production is mainly intended for self-consumption within the associative restaurant (Casa Consolat) by responding to an approach of sustainability and circular economy.
We started our vinifications from the 2023 vintage after having reorganized the cellar (located on the other side of the street from the restaurant).
The harvest is carried out by hand with the utmost care in order to bring quality grapes into the cellar. We are convinced that the wine is made from good management of the vines.
Our wines are vinified with indigenous yeasts and without any additives. Unfiltered, unfined.
No SO, at reception or during winemaking.
Agricultural project:
This is an agricultural project around vines and viticulture, combining agroecological production of wine, juice, verjuice and products from the recovery of waste from the activity (seeds, marc, etc.) with a strong vocation for solidarity, education, knowledge sharing and the federation of winegrowers engaged in the agroecological transition of the vine.
It consists of 4 axes:
Production and agroforestry: cultivation on living soil and according to agroecological practices. Production of organic grapes, from old grape varieties. Production of wine, but also grape juice and verjuice, from grapes and using natural fermentations. Direct sale and short circuit of products to private customers, restaurateurs and associative canteens.
Valorization of wine waste: production of grape seed oil and, eventually, other high added value products (ceramics, cosmetics, grape marc flour, etc.). Return of waste (marc, stalks, etc.) as green fertilizer. Recovery of used containers (glass bottles) returned and reused. This offer will be aimed at a variety of audiences: individuals, community canteens, Grocery Stores, member restaurants of the Alliance of Cooks, Ecotable members, etc.
Education and awareness-raising: raising awareness among the general public (and also children) on topics relating to agroforestry, agroecology, natural wine, organic juices, waste management, using in particular a demonstrator agroecological micro-vineyard.
Networking of winegrowers: organization of events around wine and agroforestry. Implementation of a digital data platform.
