We have been making natural wine for 4 years now in the south of France, a terroir in PDO Côte de Provence, in the Var (83) near Draguignan. We bought 2 hectares of vines planted a little over 50 years ago now in Grenache, Syrah, Cabernet Sauvignon and Cinsault. These vines are bordered by forests and isolated in a valley, but crossed by a stream of water and bordered by a Roman well. We have worked and restructured these vines to produce natural wine only with training, pruning to sculpt the vines and put them back in shape. We do not adhere to organic or demeter or HVE labels ... or future labels to come. But we respect nature without any input NEITHER IN THE VINES NOR IN OUR WINES. The vines are maintained with copper in a minimal version! and our olive trees are pulverized with clay only. Sizes and ecimages are made by hand only. The harvest is also done by hand, very very early in the morning, respecting each bunch of grapes. The transport of the grapes to the cellar is done in crates so as not to hit the bunches. The work in the cellar is also done by hand, from destemming to pressing, but also bottling. Our wines are not acidic because we ensure drastic hygiene in all the design of our wines. Our cellar, buried, two hundred years old! in the historic center of Draguignan, allows us to vinify with a constant, cool, and ideal temperature all year round! Our entire winery is made of stainless steel, so once again without any external disturbance during the vinification. Our vintages come from vinification methods on lees, with stirring which gives them particular flavors depending on the mixtures of grape varieties.
