We acquired 2 hectares of vines planted a little over 50 years ago with Grenache, Syrah, Cabernet Sauvignon, and Cinsault. These vines are bordered by forests and nestled in a small valley, but crossed by a stream and bordered by a Roman well. We have worked and restructured these vines to produce only natural wine, using trellising and pruning to sculpt and reshape the vines. We do not adhere to organic, Demeter, or HVE labels... or any future labels. But we respect nature without any additives, neither in the vines nor in our wines. The vines are treated with minimal copper spraying, and our olive trees are sprayed with clay only. Pruning and topping are done entirely by hand. The harvest is also done by hand, very early in the morning, with care for each individual bunch of grapes. The grapes are transported to the winery in crates to avoid damaging the bunches.
The work in the cellar is also done entirely by hand, from destemming to pressing, and even bottling. Our wines are not acidic because we maintain strict hygiene throughout the entire winemaking process. Our cellar, two centuries old and located underground in the historic center of Draguignan, allows us to vinify at a constant, cool, and ideal temperature year-round. All our tanks are made of stainless steel, ensuring that there is no external interference during vinification. Our wines are produced using lees aging methods, with bâtonnage (lees stirring), which imparts distinctive flavors depending on the grape blends.
