The vines are cultivated using organic farming methods, the grapes are hand-harvested, and fermentations are spontaneous (using indigenous yeasts). No oenological additives or harsh processing are used until bottling. Very small doses of SO2 may be added exceptionally if the wine shows low resistance to oxidation or the beginning of bacterial spoilage, the goal remaining zero additives. There is no filtration either. Approximately half of the wines produced are made from grapes grown by us, the other half from purchased grapes. These purchased grapes are always organically grown, whether certified or not, and are also always harvested by us, within a maximum of 30 km of our vineyards and always with the same growers (5 in total). Our vines are certified organic by Certipaq. We have converted all our wines to Vin de France since 2019, so we had to change the name of the estate to Calvez-Bobinet (formerly Domaine Bobinet), since the use of the name Domaine is confiscated from non-AOC vineyards.
