David cultivates 6.5 hectares, primarily Melon de Bourgogne grapes, under the Muscadet, Muscadet Sèvre et Maine, and Vin de France appellations, and a small amount of Folle Blanche, also under the Vin de France designation. The estate has been undergoing organic conversion since 2017 and 2019, depending on the specific terroir, which is composed of granite, schist, and silt. No herbicides or pesticides are used in cultivation, except for small amounts of sulfur and copper, applied sparingly to treat diseases. The grapes are harvested and sorted by hand before gentle pressing. The same philosophy applies to winemaking: no additives, except for occasional sulfur to help the wines achieve balance. Aging takes place in stainless steel and concrete tanks, both above and below ground, on the lees for 6 to 14 months, using indigenous yeasts, of course.
