Bruno Ciofi, former winemaker of Domaine de la Pinte in the Jura near Arbois, decided to create the Béret et Compagnie trading house. He thus buys musts from organic farming and if possible also from biodynamics and vinifies them in a specific way. Each vineyard is meticulously studied, according to the philosophy, the terroir, the grape varieties, the climate, the cultivation of the vine, in order to select the most qualitative grapes. In the cellar, his approach is little interventionist. The fermentations are carried out using indigenous yeasts naturally present on the berries and the winemaker uses as little sulfur as possible in order to give the fruits the freedom to express all their aromas. The winemaker's goal is to create pure and authentic vintages, reflecting all the characteristics of their grape varieties and their terroir. The labels of his vintages reflect a vegetal and poetic imagination with which he feels close.
