The vineyard, now comprising 21 hectares, has been farmed organically since 2006 (Ecocert certified) and biodynamically (Biodyvin 2020). 90% of the plots are located within the Corbières and Cru Boutenac appellations. Since 2004, the vines have been cultivated naturally: treatments based on herbal teas, compost juice, mineral sulfur, clay and rock dust; application of biodynamic preparations; shallow tilling; and cover cropping with cereals and legumes in the autumn, which are then rolled or lightly plowed into the soil before summer to create a mulch, protecting against erosion and solar impact, and thus enhancing soil life, so central to the concept of terroir. A unique feature: two-thirds of the estate is planted with Carignan, Cinsault, and Grenache vines between 70 and 130 years old. The grapes are harvested by hand, sorted on the vine, and transported in crates or small bins to avoid damaging the berries. Vinification is traditional, often with destemming, depending on the vintage. We perform a few gentle pump-overs and allow fermentation to proceed naturally, carefully controlling temperatures (using indigenous yeasts). No additives are used, except for a small amount of sulfites in certain cuvées at bottling.
