The harvest is manual and the vinification is carried out using indigenous yeasts.
The reds are vinified in long maceration with a maturation of 5 to 7 years in bottle; they can be drunk today or continue their aging.
The wines of Peyres-Combe are part of modernity - organic farming - through the way the vines are cultivated and in tradition through the nature of these wines which are non-technological, which are wines of a long time....aged wines.
