Domaine de Cantalauze - Gaillac wines
Domaine de Cantalauze comprises 9 hectares of vineyards surrounded by woods, natural meadows, dry-stone walls, and organic crops, situated on the Cordes plateau, a small limestone plateau nestled against the Grésigne forest. Since 1982, the estate has cultivated biodiversity, nurtured soil health, and implemented a tailored approach to vineyard management, experimenting with holistic and ecological organic farming. Cantalauze is also a human adventure, with its winemakers, grape harvesters who hand-pick each vintage, and wine lovers who gather there throughout the year.
Daily care and attention to the vines and their ecosystem allow for the spontaneous fermentation of wines, using only indigenous yeasts, to be produced with a rich character reflecting the unique terroir and vintage. The diversity of grape varieties cultivated on the estate, along with the various winemaking and aging methods, showcases the rich heritage of the Gaillac region.
All year round we welcome you to our wine cellar built directly into the limestone rock and with centuries-old walls of the same rock which offers a very pleasant coolness in the summer.
We offer tours of our vineyards to explain how we cultivate them, as well as of the winery which brings together in one place the different winemaking workshops: from the reception of the harvest to the amphorae, passing through the vat room or the disgorging workshop.
