We wanted to build this wine project together, because our partnership and complementary skills are a strength. We pay particular attention to respecting the environment, working not against nature but in harmony with it. Established in 2020, our first vintage is 2021. The Setting: We set up our pickaxes and pruning shears in Roussillon, not only for the appeal of its terroir, both varied and bountiful, but also because it is Damien's homeland, where he has strong family and friends. Lize, originally from Normandy, fell under the spell of this region with its strong identity: varied landscapes, both coastal and mountainous, diverse terroirs, and a Mediterranean climate sometimes influenced by the venerable Canigou Massif. The Vineyards: It was in the small village of Oms, overlooking Céret, that we discovered a gem! Magnificent vineyards stretch across 4 hectares, surrounded by woods (cork oaks, holm oaks, chestnut trees, and others). Four grape varieties are cultivated here: Syrah, Carignan Noir, Grenache Noir, and Grenache Gris. The plots rise to an altitude of 400 meters and face southeast. Red ochre (a mixture of clay and silica) and schist vie for dominance in the soils of this enchanting site. Practicing organic farming since planting, we aim to express singular, elegant, and fresh wines from these vines on this unique terroir. Winemaking and Wines: We are fortunate to work with a diverse and cool terroir for a southern region. Expressing this richness is central to our work. The grapes are vinified using indigenous yeasts. Extractions are carefully controlled, and fermentation temperatures are relatively low. No additives are used except for a small dose of sulfur at bottling.
