Using a bicycle and its trailer, it is grown using organic farming methods, using plants, compost, bacteria, essential oils, and anything else that seems beneficial for conserving and providing maximum energy. It constitutes the "GRENACHES" vintage.
A handful of grapes are also purchased in Savoie (Pinot Noir and/or Mondeuse) from a friend Julien Viana (Cellier de la Baraterie in Cruet), and sometimes from other regions, depending on encounters and desires. These grapes vinified in my cellar are grown naturally.
In the cellar, I strive to respect the magic of natural fermentation. I then accompany the juices in a suitable aging process, to deliver a wine that seems just right and that ideally reflects a place in its year. The wines are not filtered, and bottling is done by hand, by gravity.
The total production per year is approximately 2,500 bottles of Vin de France.
