Eau De Souche - Lionel Gauby

Eau de Souche is a 0.4-hectare plot located one kilometer from the village of Calce. This very old Grenache vineyard, 90 years old, is interplanted with Noir, Gris, and Blanc. Growing on limestone at an altitude of 250 meters, it offers a distant view of the sea.

Using a bicycle and trailer, it is cultivated using organic farming methods, with plants, compost, bacteria, essential oils, and anything else that seems beneficial for preserving and providing maximum energy as allies. This constitutes the "GRENACHES" cuvée.

A handful of grapes is also bought in Savoie (Pinot Noir and/or Mondeuse) from a friend, Julien Viana (Cellier de la Baraterie in Cruet), and sometimes from other regions, depending on encounters and whims. These grapes, vinified in my cellar, are grown naturally.

In the cellar, I strive to respect the magic of natural fermentation. I then guide the juices through a suitable aging process, to produce a wine that feels authentic to me and ideally reflects its terroir and vintage. The wines are unfiltered, and bottling is done by hand, using gravity.

The total annual production is approximately 1500 bottles of Vin de France.
