Among vineyards, orchards, and permaculture practices, he showcases rare grape varieties such as Prunelart , Mauzac Rose , and Jurançon Noir , giving rise to unique cuvées marked by the freshness and minerality of their limestone soils. It is the ideal place to distill eaux-de-vie and liqueurs, but also to vinify and age his wines. The harvests are done by hand, and the entire winemaking process supports and respects the terroir.
