The adventure continues as close as possible to their convictions, mechanical and manual weeding, pruning respectful of the plant, use of organic fertilization and continuing in the cellar with manual harvesting, indigenous yeasts, gentle maceration, racking and decanting, without inputs, only grapes.
In 2020 and 2022, they planted just over a hectare with a local and somewhat forgotten grape variety, Valdiguié, as well as Prunelart, Fer Servadou, and Mauzac. Lovingly tending their vineyard, they eagerly await the first harvest! Today, Eva has taken the reins of the burgeoning estate on her own, but she can still count on her partner Guillaume and her parents, Jean Marc and Marie Jo, with whom she shares fears, uncertainties, and questions, but always with the same enthusiasm and sense of wonder.
Why Ostald'Oc? Because where I'm from, "l'ostal" means the home, the house, and "ostalada" means the family that lives in the home, and "oc" means Occitanie but also "with"... in short, Ostalad'Oc: a story "with the family".
