A little history
• Coming from a family of epicureans, travelers and
lovers of good products, the cultivation of the vine
has become my first concern
professional from 2006
• Attentive to the good manners of producing without
contradicting nature, my minimalist work
agrees with the biotope
• My wine reflects these approaches which are felt
in the sincerity of its terroir
The environment
• Nestled on the heights of the communes of St Pons de Mauchiens and St Pargoire, in the Hérault, the estate extends over an area of approximately 7 hectares
• The vines planted for more than 30 years bring together more than 6 varieties of grape varieties
• Carignan, Cinsault, Grenache, Alicante, Syrah, Merlot, Cabernet...
Craftsmanship
• From one stage to another, pruning, harvesting, vinification, care of the vine, manual work requires constant adaptation and attention
• The natural management of the vineyard brings an intense and concentrated grape producing a low quality yield
Winemaking
• After the harvest, the grapes are de-stemmed and then placed in vats. Not using yeast, special attention must be paid to the evolution of the fermentation
• A long maceration allows the grapes to extract their qualities and all their uniqueness.
• The wines are aged in barrels or vats until they are bottled.
