Domaine Grès Vaillant - Aigline de CAUSANS & Laurent MAFFEIS
Located at the beginning of the upper Aude Valley (IGP) near Limoux, our 90-hectare estate comprises 8 hectares of vineyards (with 8 grape varieties), 20 hectares of meadows, and 60 hectares of forest, all crossed by a river and a stream. Our vineyard plots are scattered throughout the estate, each enclosed by hedgerows or bordered by fields and forest. The estate is situated on the north-facing slope of the hill.

In the vineyard:
We work using animal traction with our three draft horses that live on the estate and our plots are also grazed by our small flock of sheep during the winter.
We carry out manual pruning (without electric secateurs), manual shoot thinning, manual bud removal, trimming and topping are done manually (with shears according to the needs of each plant).
The harvest is done manually in small, ventilated 12-kilo crates, allowing the grapes to be preserved until they arrive at the winery.
In the cellar:
Our cellar, located in the heart of the estate, dates from the 18th century and is partly carved into the sandstone, ensuring freshness and humidity in all seasons, and is built on two levels allowing for gravity-fed vatting.
Fermentation takes place using natural yeasts (with a starter culture prepared for each plot) in temperature-controlled stainless steel tanks, and aging (depending on the cuvée) takes place in large, old Burgundy barrels. We add a small amount of sulfites at bottling (if necessary and depending on the cuvée) to ensure the stability of the wines.
