Located in Torchamp, in the heart of the Orne bocage, Jérôme Forget is much more than a producer; he is the custodian of a unique living heritage. Since the mid-1990s, he has managed the Ferme de l'Yonnière, a domain defined by its monumental "high-stem" (haute-tige) pear trees—majestic giants that can reach up to 20 meters in height and live for over 300 years. In Jérôme's hands, Poiré (perry) is treated not as a simple rustic beverage, but as a fine terroir wine.
The work at l'Yonnière is defined by deep respect for the landscape. The fruit—primarily the acidic Plant de Blanc for the Domfront AOP, but also rare varieties like Fossey or Vinot—is harvested by hand only when perfectly ripe. In the cellar, the philosophy is uncompromisingly natural: fermentations are triggered solely by wild yeasts (levures indigènes), with no additives, no pasteurization, and no heavy filtration.
The "Forget style" is celebrated for its incredible tension and purity. His cuvées, whether single-parcel or blends, are characterized by an extremely fine bubble and a masterful balance between natural residual sugar and the subtle tannic bitterness inherent to ancient pear varieties. Deep, complex, and surprisingly age-worthy, Jérôme’s poirés have transcended the farm, finding their rightful place on the lists of the world’s most prestigious natural wine bars and Michelin-starred restaurants.
