At the farm we follow permaculture principles and are organic certified (ecocert), and in our winemaking rely as much as possible, on the biodynamic calendar, also certified organic. We are in Dordogne ( south west France) , in the Bergerac region ( the less posh, humble sibling of Bordeaux, thus the same grapes as Bordeaux region). We are negociants working with growers to have great quality organic grapes to make our wine.
The terroir we work with is limestone and clay, hot dry summers, rainy winters and mild in between. Natural winemaking Our definition of natural wine is- fermented grapes (nothing more or less) made with honesty and consideration. We rely on local organically grown, quality grapes to spontaneously ferment juice into wine, without any additions. We are zero zero, meaning we do not sulphite, fine or filter our wines.
Our winery is low tech and de-mechanised, using just a handmade wooden destemmer, foot crushed, vertical electric and manual basket press and electric pump. We harvest, destem, bottle, disgorge, label all by hand.
Ecoglass bottles, organic corks We have chosen this path as we find it an ecologically sound way of making wine, which depends on a philosophy of integrity and simplicity. We believe our wines to be living products on a journey, vibrant in taste and texture.
