We are two long-time friends behind this project: Laurent Bordes, the artisan winemaker, and Annica Haapa, the Finnish manager. After setting up our barrels and tanks in a former World War II bunker in the Bacalan district, we set about assembling a group of healthy and passionate winemakers.
Indeed, urban winemaking also means no vineyards on site. That's why we wanted to collaborate with people who could create a genuine human connection around this fruit, the GRAPES. We want to support people who are progressing individually and who aren't able to bottle all of their production.
We are therefore both wine merchants and farmers, as we harvest and transport each grape ourselves, working hand in hand with these winegrowers who cherish their fruit. (Visit our website; our 10 current winemakers are featured there because we have complete transparency!). Our wines may be certified organic, in conversion, or uncertified because one of the grapes is in its first year of conversion. And yes, we support our winemakers from the very beginning to show them they made the right choice in starting their conversion!
As for the winemaking process, nothing too special, as we respect the grapes from each origin so they can express their natural balance, as determined by their terroir each year. We don't over-extract, despite my size 44 shoe size, which I use for a few punch-downs. Indigenous yeasts work slowly in our tanks for the reds and in a few old barrels for the whites. We handle the juices as little as possible, allowing them to clarify on their lees, which means we don't need to fin or filter before bottling. Generally, 1g/L of sulfur is added at bottling to provide a bit of protection during the journey of our bottles.
Our blends are driven by a desire to surprise with new balances resulting from the encounter of different terroirs across France. We don't want to create single-varietal wines, despite the pleasure they can bring. We feel it's respectful to avoid comparisons with our partner winemakers, who also make their own wines that deserve to be discovered without prejudice.
Each year we create only small batches of 2,000 to 5,000 bottles so as not to stifle our creative passion. That's why we collaborate with local artists who deserve to be known. As you can see, we thrive on human collaboration at every stage! Drink well, drink healthy, and remember that every wine is made by a person somewhere who works with passion!
