Micro Plot of 210M2 (the only intra-urban plot in Île-de-France) => 150 vines, planted in 1998. Only Pinot Noir, pruned in Guyot, switching to Double Guyot next year, Training at 1m80, planted 1M between the vines, 1m50 between the rows.

No certification yet, this vineyard was previously exploited for "folkloric" purposes by the town hall, but no pesticides, chemical fertilizers, or weedkillers have been used since 2014.

Bio-Dynamic Treatment on the advice of my winegrower friends (Dominique Derain, Pierre Pelletier, and all those selected at the store, Aux Cépages d'Ermont.

Spontaneous fermentation, no yeast, just 1 starter culture with the trellis I have in my garden.
Coarse filtration with the bottling machine filter
No fining and only 1 racking in December, just to clarify.
Total SO2 post-bottling: 0.5G of So2/Hecto in liquid solution
