In the fight against intensive chemical use and tasteless, odorless overproduction... I also aim to recreate more biodiversity in my vineyard by planting trees every year :)
Minimal intervention in the vineyard ! Pruning is very gentle, with 100% of the vines trained in Royat cordons . The wood is pulled from the ground (where it will decompose naturally, providing organic matter), then tied and braided. No topping, no heavy tractors, just my feet and hands. We also have the distinction of having planted Gamay in Alsace and having reclaimed old plots of Alsatian hybrid grape varieties !
Regarding treatments: herbal teas and decoctions , a little Bordeaux mixture, sulfur (all in homeopathic doses ), the bare minimum! Because I study the microclimates of each plot and assess the risks, never giving in to the pressure from "others" predicting the worst....
More than 30% of the surface area was left untreated in 2020, 2021, 2022, 2023 and 2024, another part was deliberately left fallow.
At harvest time, the hand-picked grapes are transported in small crates and these will be pressed by hand and arm strength in two old ratchet presses (made of wood).
The juice is then poured directly from the bucket into old barrels of buried Georgian amphorae, into 60L glass demijohns or sometimes stainless steel tanks.
Fermentation and aging are completely natural , of course, with no filtration or other intervention and no additives whatsoever ! Bottling is done by hand using gravity, without any machinery. Then, each bottle is individually waxed by hand, and the label is applied, bottle by bottle.
