Soil maintenance is exclusively mechanical, carried out through plowing and hoeing using tine plows and inter-row blades to control naturally occurring plants (a wide variety of grasses and flowers), aerating and promoting soil life and supporting all organisms and microorganisms. Vine protection is achieved solely through the use of very low doses of Bordeaux mixture (copper salt used for over 100 years) and sulfur, as well as horsetail and nettle infusions. All synthetic products are excluded. Harvesting is 100% manual and spread over 5 to 6 weeks to pick the grapes at their closest point to optimal ripeness. Very gentle pressing extracts a clear juice containing all the rich natural aromatic components. A slow, natural, spontaneous fermentation (development of yeasts specific to each terroir) occurs without any winemaking additives. The wines are aged on their fine lees in traditional oak casks to allow the wine to "breathe" through the wood fibers. Bottling takes place in June and especially in September.
