Paul-Bastien Clergeot is a Champagne winegrower from the Côte des Bar in Polisot.

Before Paul-Bastien arrived on the estate, his parents sold their grapes by the kilo.
Construction of the press, the vat room and first harvest in 2018.
The vineyard covers 8 hectares of old vines in the communes of Polisot, Les Riceys and Montgueux,
For the moment we are producing single-year vines.
Our goal is to establish specifications and adapt our winemaking to each plot in order to better reflect its character.
The vineyard has been undergoing organic certification since 2020. The first organic grapes will arrive for the 2024 harvest.
