An 8-hectare vineyard in Ambonnay and Bouzy, farmed biodynamically since 2009, certified by ECOCERT and DEMETER. The estate is planted with 63% Pinot Noir and 37% Chardonnay.
Plants are used in every treatment, and essential oils are added when necessary. The average age of the vines is 40 years. The soil is worked with our two draft horses, Urban and Belle. Pressing is carried out using the Coquard press. Chaptalization is prohibited on the estate. Vinification is done with natural yeasts, and the wine is aged on its lees for nine months. Our work in the vineyards and cellars is guided by the lunar calendar. We use gravity flow to preserve the wine's natural fluidity. Our entire range of Champagnes is made without added sugar, meaning zero dosage, brut nature. Sulfur is used to a very limited extent (less than 25 mg/L of total SO2).
