Anne-Cécile Jadaud is an oenologist by training. After a career as a cellar manager, she now teaches at the Amboise wine college: this is the first half of the field. The other half is Tanguy Perrault, winemaker and trainer as well. Together, they happily farm 4 hectares of vines grown organically on the Vouvray appellation. The harvest is manual, by successive sorting if the vintage requires it, and at the rate of the maturity of the grapes. The still wines (dry, semi-dry and sweet) are vinified in barrels and the fermentations are long. Sparkling wines are mainly produced using the natural sparkling method. A resolutely small estate which, in turn, writes its history in the tuffeau of Touraine.
