Hervé Villemade
It was in 1999 that Isabelle and Hervé (brother and sister) took over from their father, Henri, at the family estate. They convert it to organic farming. The harvest becomes manual and the treatments only natural.
The Hervé Villemade estate is located in the heart of the Cheverny appellation, on the left bank of the Beuvron, in Cellettes. It has 25 ha spread over 3 municipalities: Cellettes, Chitenay and Fougères s / Bièvre.
The main types of soils are flint sands and flint clays.
In the vineyard:
- Organic cultivation, ECOCERT certification
- Tillage and controlled grassing;
- Absence of chemical fertilizers;
- Use of natural phytosanitary products: sulfur and copper;
- Control of yields (35 hl - average over the last three years);
- Fully manual harvesting and sorting of the grapes in the vineyard.
In the basement:
- Fermentation based exclusively on the action of indigenous yeasts;
- No chaptalization;
- No sulfur in wine making;
- Temperature control to prolong the fermentations;
- Aging in barrels of specific vintages
