Claude Courtois is a pioneer of natural wine. For over 20 years, he has rediscovered the path to "primitive" nature in the Sologne region, hence the word "Paradise" in "Les Cailloux du Paradis" (The Pebbles of Paradise). On the estate: vines, fruit trees, hedgerows, and a farmyard… It is Etienne, one of the two Courtois sons, who has taken over the family business; Claude has kept one hectare for his own enjoyment. Julien, the other son, has his own separate production (Clos de la Bruyère); the approach is the same, with a different sensibility; the result is equally splendid! On the estate, one finds a multitude of grape varieties from here and elsewhere, many of them ungrafted. Here, Mother Nature is allowed to do her work, the grass to grow, the vines to express themselves naturally without violent human intervention, chemicals, or anything else… A large part of the production is declassified as table wine to give the Courtois family complete freedom. But be warned: the care given to the vines and the work in the cellar are extremely precise…
