We cultivate 4.5 hectares across various appellations: Bourgogne Aligoté, Bouzeron, Saint Aubin (white), and Coteaux Bourguignons, Hautes Côtes de Beaune, and Auxey-Duresses for the reds. We have no négociant business. It was very important to us, especially for Lothar, to vinify only what we produce ourselves. We are certified organic and practice many biodynamic methods (we buy numerous plants from two incredible women in the Jura region, Léa Bossard and Fanny Bertrand). Thanks to these plants (nettle manure, comfrey, burdock, and soil life mix), we try to minimize our sulfur and copper doses during the treatment period. We also regularly practice the traditional 500, 500p, and 501 regulations! However, we are not Demeter certified and don't want to be, as it's already far too much paperwork for Ecocert... In the cellar, we try to be as interventionist as possible. We let the grapes express themselves as much as possible and guide them in the direction they want to take us. We try to make the most vibrant wines possible. They're not the best, but we strive to be as rigorous as possible to achieve straightforward and pure profiles. We're not purists when it comes to no added sulfites, but often (when we manage it) we use homeopathic doses! We're based in Evelle, in the Hautes Côtes, surrounded by cliffs, cows, and vineyards. Mixed farming is still practiced around us, and we love it!!
