Organic farming practices are employed in the vineyards, with cover crops, two or three hand-trimmings/toppings, shallow soil cultivation, and treatments using a Holder A45 sprayer. Pruning respects the sap flow, and green harvesting is done by hand. The grapes are harvested by hand into 32-liter crates. In the winery, intervention is minimal, using only indigenous yeasts. Sulfur is used sparingly, and the wines are unfiltered. The labels are designed in collaboration with Geoffroy Pithon.
