Today, the company vinifies all grapes from their own 2-hectare Jura vineyard (EARL La Vigneronne), alongside organic and biodynamic grapes sourced from other regions.
They have always farmed their vineyards organically, often the “old-fashioned way” using a pickaxe, brush cutter, sprayer, and manual pruning. One day, Lannay and Isabelle hope to transition to farming on horseback.
Their winemaking process is kept as simple as possible, letting nature take its course without any additives:
Maceration: Everything is done using semi-carbonic methods.
Fermentation: They occasionally pump over to aid the process, but interfere as little as possible.
Structure: Depending on the vintage, they decide whether to keep the stems to ensure a profile that is consistently fresh, fruity, and balanced by a lovely acidity.
Maxim and Isabelle produce a diverse range of cuvées, including their Jura estate wines and their merchant labels. While each vintage is unique, their merchant wines offer them the creative freedom to experiment with various blends. Meanwhile, the Jura cuvées remain virtually the same from year to year—provided the harvest yields the grapes to make them.
