"The Miniaturist of Wine" Fabien is a specialist in "micro-cuvées". Indeed, depending on the year, it can produce more than thirty cuvées. Some cuvées are only 100 litres, others only 25 litres. Often autochthonous grape varieties or rare crossings. One day Fabien vinified a foot of Blanchier, a grape variety whose ampelographic origin is almost unknown, perhaps Swiss... From this old vine stock, he extracted 3 liters, which he put in 6 half -bottles... Installed in the Three-Lakes region. All the cuvées are vinified without inputs, with their own indigenous yeasts, without fining or filtration, and without added SO2 from start to finish.
