Domaine Balma D’Éole - Thomas Baumet & Manon Serillon
Our idea is to be able to transform the fruits that nature offers us with respect and precision. Create a space rich in biodiversity including vines but also trees and bees to achieve a balance and the intention of its next years. Biodynamic certification is on the way. A respected southern terroir, the sense of gesture and sharing are our sources!
The land is family owned and certified organic since 2008, the elders offered us a dream playground; of antique carignan and grenache massales from 1946.
The Domain originates in Rochegude (26790). Our vines take shape in four plots on a terroir, of rolled pebbles and red clay in Suze la Rousse, scrubland and limestone in Lagarde Paréol.
Most of the work in the vineyard is manual. For the harvest, the perception of good ripening decides the date, neither too much nor too little. Freshness and sun must be balanced! To achieve this, harvesting the grapes in boxes is obvious. Harvesting in boxes makes it possible to limit oxidation and to have a precise perception of the quality of the grapes. Not to mention that harvesting the work of an entire year surrounded by friends who come to lend us a hand is a unique moment.
In the cellar, nothing is written in advance, whole harvest, semi-scraped, scratched... Everything is allowed! Even at the last minute. The yeasts are indigenous and we do not use any oenological input. The tasting and the evolution of the fermentations decide what happens next. Regarding the devatting the grapes are put in the press manually in order to preserve their freshness for our first year the aging of the wines was done in vats but other avenues are under consideration.
For our 2022 vintage, we have separated our wines into 5 cuvées, for some of the plot selection, for others a jus-dicieux blend.
