All the grapes come from sandstone terroirs typical of the Cévennes region and are certified organic or in conversion. The harvest is done by hand and the crop is transported in crates to the cellar. No inputs are used during the winemaking process, no fining or filtration. I add a small dose of sulfites (1g/hl) at the time of bottling to protect the wine during this decisive stage.
