We currently cultivate 1.5 hectares of vines in the Combe de Savoie, spread across three plots (Jacquère, Chardonnay, Pinot Noir, and Gamay). The work is primarily done by hand, except for treatments (copper spray and Bordeaux mixture) and mowing once or twice a year. Harvesting is done by hand into small crates, and fermentation occurs spontaneously in barrels or used (epoxy-lined) tanks. The wines are aged on their lees without settling until they reach their full potential. Bottling is done with sulfites added only when necessary (for aeration tests). In short, we minimize intervention and sulfites.
