Domaine des Canailles is located in Ternand in the southern Beaujolais region, in the "Pierres Dorées" area, just 30 km northwest of Lyon. The 8 hectares of vines have been cultivated organically since 2005 and biodynamically since Simon Pérot took over the vineyards in 2019. They are all situated on granite soils at an altitude of between 450 and 550 meters.

The story begins in 2010, when the two rascals met while studying for a BTS (Advanced Vocational Diploma) in wine and spirits sales in Gaillac. After working as a wine merchant at Antic Wine in Lyon and taking his first steps in the vineyards at Jean-François Vaillant's Domaine des Grandes Vignes in Anjou, Simon Pérot went on to complete a BTS in viticulture and oenology with Claire Naudin-Ferrand in Burgundy, then worked for André Perret in the northern Rhône Valley. Finally, he managed the vineyard at the Bel Air high school in Beaujolais.

In 2019, Simon took over Jean-Jacques Paire's vineyards. Winemaking is done with respect for the grapes: indigenous yeasts, no filtration or fining. Only a tiny amount of sulfur is added, if necessary. Etienne Ubaud continued his studies with a supplementary sommelier qualification, working part-time at the restaurant "Le Nez Rouge" in Toulouse. He then worked at the wine shop "L'envie du Sud," also in Toulouse, before traveling the world for three years, notably in Montreal. In September 2019, he joined Simon for the harvest and winemaking, marking the beginning of the adventure of these mischievous spirits!
