In the surrounding villages, we cultivate 3 hectares of Syrah, Grenache, Viognier, Chardonnay, and Merlot planted on plots with varied soil profiles of clay, limestone, basalt, and marl. A small négociant business allows us to vinify two additional grape varieties (Rolle and Cinsault), made from certified organic grapes.
In the vineyards, mechanical intervention and soil cultivation are limited, leaving a plant cover to preserve soil life. Our Viognier plot, planted on terraces (with views of the Cévennes mountains), is difficult to mechanize and requires entirely manual labor. The vines are being converted to organic farming. We harvest by hand to preserve the quality of the grapes.
The wines are made without additives, except sometimes for a small amount of SO2 when deemed necessary. The wines are neither fined nor filtered, and fermentation occurs with indigenous yeasts. Pressing and extraction are slow to obtain juices that are as pure and authentic as possible, true to the grapes from our vines.
Since 2025 we have also been aging some of our wines in barrels (they are not yet commercially available).
