Constantly searching for exceptional, accessible terroirs, we opted to replant vines around already planted plots. These plots share the common characteristic of being located on hillsides inaccessible to machinery, isolated from other vineyards and crops. All work is done by hand: tilling the soil with horses or winches, and treatments applied by hand without fungicides or other synthetic products. Organic certification is in progress. 1.7 hectares are currently in production, with 7 ares planted in 2019.
In the cellar, we want to let the work in the vineyards and the terroir speak for themselves. Our winemaking (first vintage in 2016) is inspired by traditional methods in our region: gentle punch-downs and pump-overs for the reds, and direct pressing for the whites. We strive to find the most suitable aging techniques for each vintage and each cuvée, within our means, to best support their development. We work with indigenous yeasts, using no additives except for very low doses of sulfur, only when absolutely necessary.
