The vineyards overlook Lake Geneva, on clay-limestone soil at an altitude of 500 meters. The Chasselas vines, ranging from 30 to 70 years old, were planted by my grandfather and father. The Gamay vineyard, the oldest in the village, is over 120 years old and produces a high-quality wine. It is worked exclusively with horses. We make our own treatments for the vines (fermented extracts, infusions, etc.). The plants are gathered in the mountains a few kilometers from the estate. The harvest is done by hand, in a family atmosphere. In winter, the estate's Thônes et Marthod sheep graze in the vineyards. In the cellar, no additives are used. A small amount of SO2 is added to the white wine at harvest time. The indigenous yeasts naturally present on the grapes and in the atmosphere take care of the fermentation, which is rather long. The operations in the cellar (racking, bottling) are carried out using the lunar calendar.
