Domaine Phloeme - Perrine QUIRION and John GUENOLE

The estate was created in 2023, in the Puy de Dôme region near the Livradois-Forez. The winery is located in La Chapelle sur Usson and the vines are on the Bansat hillside, situated at an altitude of 400 meters, covering 2 hectares on a northwest-facing slope, cultivated on sandy soils.

The vines, around thirty years old, have always been cultivated organically. We use the lunar calendar, which guides our viticultural and winemaking work. Another key aspect is no-till farming, a technique that preserves the soil's natural structure and encourages microbial life.

-IGP Puy de Dôme - Sagnards Rouge - 100% Pinot Noir - 26 months of barrel aging

-IGP Puy de Dôme -Badoulin - 100% Gamay - 15 months of barrel aging

For cellar work

- Grape harvest in 20/25kg crates with a hood

- Grape catcher

- Sorting table

- Maceration/Fermentation in a fiber vat (red)

- Press

- Aged in barrels

- Direct press for white

- Fermentation and aging in barrels

 

No additives, no sulfites. Minimal intervention, no pumping over or punching down, racking for bottling, with nitrogen (gas) to inert the bottles.
