Since we started, we have worked organically. Currently in conversion to organic farming, we will be certified in 2024. In the vineyard, ground cover grows spontaneously and abundantly between the rows of vines. We plow at the base of the vines to reduce competition from the grass for water and nutrients. We work with a tracked tractor, an indispensable tool on our steep slopes. It also allows us to reduce soil compaction caused by mechanization. The base of our vineyard treatments consists of copper/sulfur, supplemented with plant preparations (nettle, horsetail, comfrey, yarrow, etc.) which allow us to reduce the use of pesticides. The harvest is done by hand for better grape quality and greater precision in the juice. In the cellar, fermentations are spontaneous. We use no oenological additives except for sulfur in homeopathic doses, if necessary. It is the air resistance tests we conduct that provide us with information on the stability of the wines. If any obvious fragility is detected, we add sulfur before bottling (maximum 1.5 g per 100 liters of wine).
Starting in 2018, Lisanne began her winemaking adventure by buying certified organic grapes from winemaker friends and then vinifying them. This négociant activity is still part of our business and allows us to create unique wines with grape varieties different from our own, but which we love.
