Between the Jura and Savoie regions, I am spoiled by the abundance of grape varieties. Mondeuse and Gamay for the reds, and Jacquère Altesse Aligoté and Chardonnay make up the whites in my cellar. I currently cultivate 4 hectares of vines, which I supplement by purchasing organically grown grapes in Savoie. The plots are scattered between the Belleysan Basin, Corbonod, and Ambléon.
I use Bordeaux mixture and sulfur to protect my vines primarily from powdery mildew and downy mildew. Zero sulfites in the cellar. Zero sulfites at bottling. That's my commitment. Healthy grapes, hand-harvested and brought home in 15kg fruit crates. Pressing in a hand-operated wooden ratchet press, hand-crushing, settling, and racking are the only actions taken in the cellar. Fermentation is spontaneous and supported by gentle pump-overs.
