Our vines, planted between 380 and 500 m altitude, are scattered across different hillsides with very different terroirs. On the northern slope of the Puy de Corent (basaltic plateau), we find a rich, black soil marked by the region's volcanic activity, while on the southern slopes of the Puy de Marmant and the Montagne de Stras (scree from the Massif du Sancy), we are dealing with clay and limestone soil.
In the vineyard, we work in organic farming and practice the principles of biodynamics to limit the doses of copper and sulfur.
Our hand-harvested grapes are vinified using indigenous yeasts without any oenological additives or filtration. Aging time varies depending on the vintage. We use barrels, terracotta and stoneware jars, or concrete tanks. A light sulfiting may be carried out before bottling if necessary.
