Between 2019 and 2022 we planted 2.5 hectares of vines with the aim of making 80 HL of wine per year when all the vines are in full production. The choice of grape varieties was simple because our favorite red grape varieties (Pinot Noir and Gamay) turned out to be adapted to the terroir. For the white, we made a bet and chose the Pinot Gris which is rarely used on this terroir and which will be enhanced by the granite soil.
The vines are located on hillsides between 500 and 600m above sea level, surrounded by forest which promotes biodiversity. They are pruned in Guyot, Goblet or Cordon de Royat and, given our location, all operations in the vineyard are done by hand with the exception of some soil work carried out with a crawler tractor.
The vines are accompanied with fermented extracts, decoctions or macerations and with essential oils. The use of sulfur is totally banned in our plots and copper is very limited.
The harvest is manual and the pressing is done with a vertical ratchet press. The wines are vinified on site as naturally as possible, the fermentations are in indigenous yeasts, without inputs, nor fining or filtration. The aging is done in sandstone vats to sublimate the different grape varieties and the particularities of each vintage. While waiting for the full production of our vines, we supplement by buying grapes from producers with the same work philosophy.
