As in all mountainous regions, the subsoil is constantly shifting due to geological movements. This results in a great diversity of soils, so most wines are produced on a plot-by-plot basis to highlight the terroir. In the vineyard, work is adapted to the plots and the slope. It involves hoeing, animal traction with teams of mules and horses, tractors, and winches on the steepest plots. The vines are treated as needed with sulfur, copper, plant decoctions, and 500P and 501. The grapes are harvested by hand into crates to keep them intact until they reach the winery. After slow pressing, the must flows into the tanks by gravity. Fermentation begins spontaneously with indigenous yeasts.
