We are a small scale cider and fruit pet nat producer. All the fruit is handpicked in local backyards, which we secure is not sprayed.

During vinification we work with a zero-zero approach, and everything is spontaneously fermented and without addition of sulphites. We like to macerate our mashed fruit for 1-10 days, and are generally hands off after the primary fermentation is nearly done. Everything sits on its lees for about 10 months, untill we bottle in the early autumn. We pick and juice the first apples of the season, and when about 2/3 through the fermentation, we use this as a starter culture, to help a healthy second fermentation on the bottle, for the previous years cider.
