In the vineyards, we use almost exclusively herbal infusions (NO chemicals). The vineyards can be found in Velké Bílovice (South Moravia, Czechia; 1 ha). Mostly, they are on a southern hillside, the soil is mainly clay. Occasionally, we use a tractor, but most work is done by hand, including picking. We avoid any interference in wine: everything ferments spontaneously, and each wine ages in a barrel on fine lees for at least 10 months. We also use the minimal amount of sulfites possible.
Working with the soil and the vines while showing the utmost respect for the ecosystem is key for us. We strive to intervene as little as possible so that the wine can breathe and develop in its own way. The result is a vibrant product that bears the imprint of a specific place and time—with all its variability and beauty.
Our approach to grape varieties is selective. We work only with those that make the most sense in our growing conditions and best express their origin.
Cuvées form the cornerstone of our winemaking. Why? Because we believe that the whole is greater than the sum of its parts. Blending selected varieties allows us to:

We believe that the best wine is not created in a laboratory, but in the vineyard. For us, “authentic wine” is not just a marketing label, but a way of life. Our goal is to capture the pure character of the landscape in every bottle, without unnecessary embellishments or technological shortcuts.
Certification: Our certification is not fully official. We follow a document called “Charta autentistů”, according to which we are not allowed to add any yeasts, proteins, tannins, sugar or acid to the wine. There is also a limit for sulfur, which is 66,6 mg/l. We are not allowed to use chemicals in vineyards.
Appellation has not yet been introduced in the Czech Republic. All of our grapes are grown on our own vineyards.
