The vineyards are located in the Thracian Lowlands, in the area of Lesichovo – a place with a long winemaking history and a favourable climate. The wines of ENSO combine indigenous Bulgarian grape varieties with carefully selected international ones, often exploring techniques such as amphora ageing and orange wine styles. The result is wines with character, texture, and a clear sense of origin – contemporary in spirit, yet deeply connected to the land they come from.
We care for the nature and we grow our vineyards organically, we are in our 3rd year of monitoring and in December we expect to have our bio-certificate for our vineyards. Our work is predominantly by hand - from the pruning to the harvest. We fertilise with manure and practise inter-row sowing for restoring the soil and keeping the biodiversity in the vineyards.
The same approach we have in the cellar. We trust that spontaneous fermentation contributes for the best terroir expression and all our wines are wild fermented. We don’t filter them and we learn how to use as less as possible sulphites in them; we have several wines with no addition of sulphites. We have 2 orange wines in our range and for the whites, rose and reds we work with amphoras and old barrels - both for the fermentation and ageing stage of the wine development.
No sparkling wines at the moment.
