We work exclusively with interspecific grape varieties, both old and new: Rondo, Pinotin, Solaris, Souvignier Gris, Prior, Monarch, DOC, Foch/Millot, 5455, Chambourcin, Landal Noir, etc. We believe that a vineyard, like a fruit tree, should be able to thrive with minimal human intervention. We don't till the soil and plan to treat only with herbal teas and liquid manure, if necessary. We simply manage the spontaneous ground cover according to the weather (cutting and leaving the clippings under the vines) and adjust the grape yield for each vine.
We make our wine without any additives, deep in a very cool cellar, using a variety of containers: stainless steel, terracotta, fiberglass, polyethylene, and wood, chosen for their capacity at harvest time rather than their natural material. We have five different plots planted, one per year since 2018, for a total of 1.5 hectares. Each plot is a different "model." One is a project by a citizens' association, another was planted as part of a participatory eco-village, the largest is a collaboration with a Brussels restaurant, and the other two are located on the land of farmers curious to see something new growing there. Everything is vinified in the same winery in a former farmhouse in Ottignies (20 kilometers from Brussels).
