Xoan Arias settled down as a young farmer on just over 5 hectares of old vines in Saint-Etienne d'Escattes, a hamlet of Souvignargues in the Gard. Concerned about respecting nature and its environment, he cultivates his grapes in organic farming and in small quantities so that the vine offers the best of its fruits. In his wines he seeks to express the specific and unique character of what his vines have experienced each year. Once the grapes are ripe, a cheerful team of grape pickers picks the finest bunches which are then destemmed before being placed in vats. For winemaking, Xoan intervenes as little as possible. He observes, contemplates, accompanies and lets the delicate and complex nature produce authentic wines. With three indigenous grape varieties from the region - Cinsault, Grenache and Carignan - it strives to offer "living", artisanal wines with character.
