We are in Tocco da Casauria in the province of Pescara, in the Abruzzo hinterland. Signora Luna is a laboratory of oenological experiments where tradition sometimes mixes with the curiosity of trying new vinifications. And so we go into prolonged macerations of the Trebbiano or into abbreviated macerations for the red in so as not to extract all the tannin typical of the Montepulciano d'Abruzzo vine and to have a ready-to-drink wine. The name evokes the peasant tradition, which is handed down from father to son of following the lunar cycles in the stages of processing in the vineyard and in the cellar. A project born as a game and which amuses us like a game because we are convinced that only with curiosity, fun and a little levity can something good be created. All fermentations are spontaneous and no oenological principals are used with the exception, depending on the year, of a sparing use of sulfur dioxide (only in the pre-fermentation phase). The wines decant naturally in the winter cold and no filtration or clarification is performed. We think this is the only way to make wine and honestly, it's the only way we can do it.
