To be a winemaker is to be an artist... Our art will please some and make others sulk. But as an artist I am free and that is the most important thing for me!
In the fight against intensive chemistry, and overproduction without taste or smell...I also aim to recreate more biodiversity in my vineyard, by planting trees each year :)
The minimum in the vineyard ! Pruning is very gentle with 100% of the vines in Royat cordons , pulling the wood placed on the ground (which will decompose naturally to provide organic matter), tying and braiding. No trimming, no big tractors passing by, just my feet and hands. We also have the particularity of having planted Gamay in Alsace but also of having recovered old plots of Alsatian hybrid grape varieties !
Concerning treatments: herbal teas and decoctions , a little Bordeaux mixture, sulfur (all in homeopathic doses ), the minimum! Because I study the micro-climates of the plots and measure the risks by never giving in to the pressure "of others" announcing the worst....
More than 30% of the surface area without any treatment in 2020, 2021, 2022, 2023 and 2024, another part left fallow voluntarily.
During the harvest, the grapes picked by hand are transported in small crates and these will be pressed by hand and arm power in two old ratchet presses (made of wood).
The juice is then filled directly into the bucket into the old barrels of buried Georgian amphorae, into 60L glass carboys or sometimes into stainless steel tanks.
Ultra natural fermentation and breeding of course, no filtration or any other intervention and no input !!! Bottling by gravity by hand and without machine. Then the bottles are waxed one by one again by hand as well as the application of the label, bottle after bottle.

En combat contre la chimie intensive, et la surproduction sans gout ni odeur...J'ai aussi pour objectif de re cr&eacute;er d'avantage de biodiversit&eacute; dans mon vignoble, en implantant des arbres chaque ann&eacute;e :)
Le minimum &agrave; la vigne ! La taille est tr&egrave;s douce avec 100% des vignes en cordons de Royat, tirage du bois d&eacute;pos&eacute; au sol (qui se d&eacute;composera naturellement pour apporter de la mati&egrave;re organique), liage et tressage. Aucun rognage, pas de gros tracteurs qui passent, juste mes pieds et mes mains. Nous avons aussi la particularit&eacute; d'avoir plant&eacute; du Gamay en Alsace mais aussi d'avoir r&eacute;cup&eacute;r&eacute; de vielles parcelles de c&eacute;pages hybrides Alsaciens !
Concernant les traitements: des tisanes et d&eacute;coctions, un peu de bouillis bordelaise, de souffre (le tout &agrave; dose hom&eacute;opathique), le minimum ! Car j'&eacute;tudie les micro-climats parcellaire et mesure les risques en ne c&egrave;dant jamais &agrave; la pression "des autres" annon&ccedil;ant le pire....
Plus de 30% de la surface sans aucun traitement en 2020, 2021, 2022, 2023 et 2024, une autre partie laiss&eacute; en friche volontairement.
Aux vendanges, les raisins ramass&eacute;s &agrave; la main sont transport&eacute;s dans des petites caissettes et ceux-ci&nbsp; seront press&eacute;s par la force de la main et des bras dans deux anciens pressoirs &agrave; cliquet (en bois).
Le jus est ensuite entonn&eacute; directement au sceau dans les vielles barriques des amphores g&eacute;orgienne enterr&eacute;e, en bonbonnes de 60L en verre ou cuve inox parfois.
Fermentation et &eacute;levage ultra naturelle &eacute;videmment, aucune filtration ni tout autre intervention et aucun intrant !!! Mise en bouteille par gravit&eacute; &agrave; la main et sans machine. Puis les bouteille sont cir&eacute;es une &agrave; une encore une fois &agrave; la main ainsi que la pose de l'&eacute;tiquette, bouteille apr&egrave;s bouteille.
