Winemaker is to be an artist. Our art will please some and make others sulk. And as an artist I am free and that is important to me! I like to try to convey, on my humble level, and to show people the reality of the world of wine and wine culture. But it is also a fight against intensive chemistry, and overproduction without taste or smell ... I also aim to re-create more bio diversity in the vineyard, by planting trees for example :) THE minimum in the vineyard! Pruning, pulling of the wood deposited on the ground (which will decompose naturally), binding and braiding. No trimming, no big tractors passing by, just my feet and hands. Regarding the treatments: herbal teas and decoctions, a little Bordeaux mixture, sulfur (all at homeopathic dose), the minimum of treatment because I study the climate, micro climates and measure the risks. 50% of the surface without any treatment in 2020, a part voluntarily left fallow. Everything is done by hand! During the harvest, the grapes are transported in small boxes and the fine grapes will be pressed by hand and arm force in an old ratchet press. The juice is then placed directly in the seal in old wood barrels, in 60L glass carboys or vats. Natural fermentation of course, no filtration or any other intervention and no input. Bottled by gravity by hand and without a machine. Then the bottles are waxed one by one by hand and the label is also affixed by hand, bottle after bottle.
